Ingredients

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp garlic powder

  • Salt and pepper to taste

  • 1 cup cauliflower rice

  • ¾ cup cottage cheese (whipped or small curd)

  • 1 cup shredded romaine or lettuce

  • ¼ avocado, sliced

  • 1 tbsp lime juice

  • Optional: salsa, jalapeños, pickled onions, pork rinds, cilantro

  5. Add lettuce, avocado, lime juice, and any optional toppings.
