This sweet potato taco cottage cheese bowl is a viral high-protein, low-carb recipe loaded with creamy cottage cheese, spicy taco meat, and roasted sweet potatoes. A perfect meal prep dish that’s ready in under 30 minutes.
Ingredients

1 large sweet potato, peeled and cubed

½ tsp garlic powder

¾ cup low-fat cottage cheese (small curd or whipped)

Instructions

Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, paprika, salt, and pepper. Roast on a baking sheet for 25–30 minutes, flipping halfway.

While sweet potatoes cook, brown ground meat in a skillet over medium heat. Add chili powder, cumin, and garlic powder. Stir and cook for 3–5 minutes until well-seasoned.

In a bowl, add cottage cheese as the base.

Layer roasted sweet potatoes and seasoned taco meat over the cottage cheese.
