Description

This sweet potato taco cottage cheese bowl is a viral high-protein, low-carb recipe loaded with creamy cottage cheese, spicy taco meat, and roasted sweet potatoes. A perfect meal prep dish that’s ready in under 30 minutes.


Ingredients

  • 1 large sweet potato, peeled and cubed

  • 1 tbsp olive oil

  • ½ tsp paprika

  • Salt and pepper to taste

  • 5 oz lean ground beef or ground turkey

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp garlic powder

  • ¾ cup low-fat cottage cheese (small curd or whipped)

  • Toppings (optional): sliced avocado, salsa, shredded romaine, pickled onions, lime juice, jalapeños


Instructions

  • Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, paprika, salt, and pepper. Roast on a baking sheet for 25–30 minutes, flipping halfway.

  • While sweet potatoes cook, brown ground meat in a skillet over medium heat. Add chili powder, cumin, and garlic powder. Stir and cook for 3–5 minutes until well-seasoned.

  • In a bowl, add cottage cheese as the base.

  • Layer roasted sweet potatoes and seasoned taco meat over the cottage cheese.

  • Add your favorite toppings: avocado, salsa, romaine, lime juice, or jalapeños.

 

  • Serve warm or cold.

Notes

  • To reduce carbs, use fewer sweet potatoes or sub in roasted cauliflower.

  • For vegetarian version, replace meat with black beans or lentils.

  • For vegan version, use plant-based cottage cheese and meat substitute.
