Description

This Sweet Potato Taco Meat Cottage Cheese Bowl is a high-protein, macro-balanced meal made with roasted sweet potatoes, taco-seasoned meat, and creamy cottage cheese. Packed with fiber, flavor, and nutrients, it’s perfect for meal prep, post-workout fuel, or a quick dinner. Easy, customizable, and totally satisfying.

Ingredients

Scale

Ingredients:

  • 1 medium sweet potato, peeled and diced

  • 6 oz ground turkey or lean ground beef

  • ½ cup cottage cheese (low-fat or full-fat)

  • 1 tsp olive oil

  • 1 tbsp taco seasoning

  • ¼ avocado, sliced

  • 2 tbsp salsa or pico de gallo

  • Optional: shredded lettuce, black beans, lime wedge, crushed tortilla chips

Instructions

  • Roast the sweet potatoes: Toss sweet potato cubes with olive oil, salt, and paprika. Roast at 400°F (200°C) for 20–25 minutes or until tender and slightly crispy.

  • Cook the taco meat: Brown ground meat in a skillet over medium heat. Add taco seasoning and a splash of water. Simmer until fully cooked and coated in spice.

  • Assemble the bowl: In a serving bowl, layer sweet potatoes, taco meat, and cottage cheese.

  • Top it off: Add salsa, avocado, and any optional toppings like lettuce, beans, or lime.

  • Serve and enjoy immediately or store components separately for meal prep.

Notes

  • Use thick, high-quality cottage cheese to avoid sogginess.

  • Swap taco meat for lentils or tofu for a vegetarian version.

  • This bowl stores well for up to 4 days—keep wet and dry toppings separate.
