Description

A high-protein, easy-to-make taco bowl that combines savory taco meat, roasted sweet potatoes, and creamy cottage cheese. Perfect for meal prep, customizable for various diets, and trending all over TikTok.


Ingredients

  • 1 cup full-fat cottage cheese

  • 1/2 lb lean ground beef or turkey

  • 1 medium sweet potato, peeled and cubed

  • 1/2 avocado, sliced

  • 2 tbsp shredded cheddar or Mexican-blend cheese

  • 2 tbsp salsa or pico de gallo

  • 1 tbsp hot honey (optional)

  • 1 tbsp olive oil (for roasting)

  • 1 tsp taco seasoning (or more to taste)

  • Optional toppings: jalapeños, crushed tortilla chips, lime wedges, pickled onions


Instructions

  • Preheat oven to 400°F (200°C).

  • Roast sweet potato: Toss cubes with olive oil, salt, and a pinch of taco seasoning. Roast on a baking sheet for 20–25 minutes until golden and tender.

  • Cook taco meat: In a skillet over medium heat, cook ground beef or turkey. Once browned, drain excess fat and stir in taco seasoning with a splash of water. Simmer for 2–3 minutes.

  • Assemble bowl: Layer roasted sweet potatoes and taco meat in a serving bowl. Add a large scoop of cottage cheese to the center.

  • Top it off: Add sliced avocado, shredded cheese, salsa, and a drizzle of hot honey if using.

 

  • Serve immediately or store components separately for meal prep.
